Dave, The food was awesome! Everyone commented on how great the food was and as you said, no one went hungry. Thank you for helping to alleviate some of my stress. A few people took your card and I mentioned your Thanksgiving Dinner. My cousin said the party thing is like giving birth, you forget about the pain after because of the happiness brought to everyone. I hope we can work together again in the future. We had the good fortune to use Dave Hyman and his crew for a party of approximately 110 people. He was referred to us by an excellent caterer, who we had used on two previous, but had retired. His operation was equally as good. We contacted him about 4 weeks before the party and met with him 3-4 times before the event. He was very professional, easy to work with, had great suggestions on the arrangement of tables, on tasty appetizers, and on the properly done main course. Everything he promised was delivered. The tables, chairs, table accessories, and most importantly the food arrived on time. Also, the assistances he had during the party were also excellent and made everyone feel at ease. Comments made by those who attended the party reflect everything I have said above. They thought the food was excellent, the help superb and several asked for his business card. In conclusion I would give Dave Hyman the maximum number of stars for his operation and highly recommend him.

On behalf of the Circle of St. Paul's, I wanted to thank you for doing such a wonderful job with the lunch for our volunteers both Friday and Saturday. We had so many rave reviews on your presentation and array of delicious salads and memorable "decadent brownies". We all were impressed with your organization and attention to detail... even bringing cream and sugar for the coffee and providing extra lemonade on the second day. You and your assistant were delightful to work with and I hope will consider catering our next luncheon in the fall.

I have had the pleasure of hiring Dave Hyman, owner/chef of Encore Performance Catering, over many years for many events, from small gatherings to hundreds. Dave and his epicurean team always provide a delicious and creative menu, excellent service, fair pricing, and he is punctual. Once you tell Dave what you need, you do not have to worry. His follow-through is great, and it allows me to focus on the event and not be distracted with food or service issues. One of my more interesting and rewarding experiences was an overnight plan by friends to hold a birthday fundraiser party—Dave got the call in the evening, and at 6 am the next morning he was at work making it happen. The food donated was wild game, a challenge to prepare, but Dave met and exceeded the challenge. With Dave's services, the event is now an annual program and has raised about $25,000 for local youth during the past 3 years. We could never have succeeded without his extraordinary interest, dedication, and culinary talent, and that is just one example of many.
